Ricotta Cookies

The families favorite Italian cookies.
Ingredients
Butter: 1/2 Cup
Ricotta cheese: 1 Cup
Vanilla extract: 1 TSP
Granulated sugar: 1 Cup
Eggs: 1 Each
All-purpose flour: 2 Cup
Baking soda: 1/2 TSP
Salt: 1/2 TSP
Instructions
Allow butter to soften and let egg and ricotta come to room temperature for best results.
Blend cheese, butter, and sugar until creamed. Add vanilla and egg, blend well.
Mix dry ingredients and add to mixing bowl a 1/2 cup at a time, mixing well. Add 1/2 bag butterscotch chips if desired.
Drop by teaspoonfuls onto greased (or parchment) cookie sheet. Bake in pre-heated 350 degree oven for 10-12 mins until light brown on the bottom.
