Besides fajitas, this marinade is excellent for anything you may use flank or other flat steaks for.
Ingredients
Pineapple Juice: 1 Cup
Light Olive Oil: 1/4 Cup
Brown Sugar: 1/2 Cup
Table Salt: 1 TBSP
Garlic Cloves (Minced): 4 Each
Red Pepper Flakes: 1/2 TSP
Black Pepper (Ground): 1 TSP
Cayenne Pepper: 1/2 TSP
Instructions
Whisk everything together in a bowl. Set aside.
If using flank steak prepare the steak by cutting diagonal grooves in both sides of the steak. For best results and flavor penetration and tenderness, slice the steak thinly before placing in the marinade.
Put steak in a heavy Ziplock and pour in the marinade. Squeeze all the air out of the Ziplock and refrigerate for 8 to 24 hours.
