Ingredients
Blackberries (Fresh): 8 Cup
Granulated Sugar: 2 Cup
Boiling Water: 2 Cup
Cornstarch: 4 TBSP
Unsalted Butter: 4 TBSP
Table Salt: 1/8 TSP
Ground Cinnamon: 1/8 TSP
Lemon Juice: 1 TBSP
Pastry For Crust: 1 Each
Instructions
Combine sugar and cornstarch in a saucepan. Pour hot water into sugar mixture and stir to combine. Place on medium to high heat and cook until thick stirring constantly.
Remove from heat add butter, salt, cinnamon, and lemon juice. Stir well. Add blackberries. Allow heat from sugar mixture to heat the berries and draw some juice from the blackberries. Let set while you make your favorite recipe for pie crust to use on the top of the coobler.
Pour blackberry mixture into a 9×13 baking dish. Place crust on top of mixture. Bake at 400 degrees for 30 minutes until crust is golden brown. Remove from oven. Serve with vanilla ice cream if desired.
